Lemon Coconut & Blueberry Mud Cake

Try this variation on our lemon coconut mud cake mix.

Ingredients

  • 1x lemon coconut mud cake mix

  • 1x tin of blueberries in syrup

Blueberry sauce ingredients

  • 3x tsp cornflour

  • 1x tbsp sugar

  • Syrup from drained Blueberries

Method

  1. Preheat oven to 160 degrees

  2. Line a loaf tin

  3. Prepare your mud cake mix as per packet directions. 

  4. Drain blueberries (save the syrup to use in your sauce).

  5. Add the drained blueberries to your mud cake and combine gently.

  6. Pour mix into the loaf tin and splash the top with a little syrup and swirl.

  7. Bake for 60 minutes.

  8. Allow to cool and refrigerate for 2 hours before cutting.

Blueberry Sauce

  1. Pour syrup into a small saucepan adding the sugar and cornflour.

  2. Whisk well to combine.

  3. Bring to the boil whilst whisking, it will reduce and thicken to make a delicious blueberry sauce. 

Enjoy a slice with blueberry sauce and fresh cream. For something different try serving with greek yoghurt.
