Upside Down Strawberry Cake

  1. Preheat oven to 160 degrees

  2. Mix strawberry mud cake as per instructions.

  3. Wash and halve strawberries.

  4. Combine cornflour and sugar in a small bowl.

  5. Toss strawberries in the cornflour mixture to coat and arrange them in the bottom of your lined cake tin.

  6. Pour the cake batter over the strawberries.

  7. Cover with a piece of foil and bake for 60 mins remove foil and bake for a further 30 mins. The cake is ready when your knife comes out clean.

  8. Allow to cool and refrigerate overnight.

  9. Remove from tin and serve with a generous amount of fresh cream.

Tip - covering with foil helps your cake to bake flat.
