Chocolate & Cherry Tray Bake

A delicious warm melt-in-your-mouth dessert with the indulgence of velvety chocolate mud cake teamed with the slight tartness of morello cherries.
Ingredients
- 1x Dark Chocolate Mud Cake Mix
- 1x jar of morello cherries
- 1x foil tray (makes life very easy)

Cherry Sauce

Reserve liquid from cherries plus a small amount of the cherries
- 1 tbsp cornflour
- 2 tbsp sugar

Instructions
- Preheat oven to 160 degrees
- Mix mud cake as per packet instructions.
- Pour into your foil tray.
- Drain all of the liquid from your cherries (reserve the liquid and a small handful of cherries as we will make a beautiful cherry sauce with it later)
- Scatter the cherries over the top of your mud cake and bake for 40 minutes.
- While it is cooking we can make our cherry sauce. Put the reserved cherry liquid and the handful of cherries into a saucepan. Add 2 tbsp of sugar and 1 tbsp of cornflour. Whisk to combine. Bring to a steady rolling boil for 10 to 15 minutes. You will notice it reduces and slightly thickens. Don't panic if it is thin - it will thicken a little more as it cools.
- Serve your Chocolate and Cherry tray bake warm from the oven. Add ice cream or cream and top with your cherry sauce.
Store in fridge, it will last for 5 days. Enjoy!
