Christmas fruit cake

Our quick and easy take on a traditional Christmas classic. It produces a perfectly moist fruit cake every time. If you want to have a little fun try swapping the white mud cake mix for a dark chocolate mud cake mix.
Ingredients
- 1x white mud cake mix
- 300ml boiling water
- 125g butter
- 500g dried fruit
- 1/3 cup brandy
- 2 tsp mixed spice
- 1 tsp dried ginger
Method
- Combine 500g of dried fruit mixed with 1/3 cup of brandy in a bowl.
- Cover with cling wrap and allow to soak overnight. Tip: chop fruit to allow the cake to cut easily.
- Preheat oven to 160 degrees. Line an 8" cake tin.
- Combine 125g of melted butter with 300ml of boiling water.
- Add your white mud cake mix, spice & ginger whisk to combine.
- Add your soaked fruit and stir. Pour into your cake tin and bake for 60 mins.
- Allow to cool and refrigerate for 2 hours in the tin before you remove it.
- Serve with your favourite buttercream.
Note- this recipe has 50ml less water than the packet directions.
