Taste of Summer with Passionfruit and Elderflower

Passionfruit & Elderflower Cake

You can use any elderflower cordial for this recipe.
Ingredients
- 160ml Elderflower Cordial
- 320ml boiling water
- 125g melted butter
- 1 Passionfruit cake mix
Directions
- Preheat oven to 180 degrees
- Combine melted butter, boiling water & your elderflower cordial.
- Add your passionfruit cake mix & whisk to combine.
- Pour into a lined 8" tin & bake for 50 to 60 mins until a knife comes out clean.
- Allow to cool and refrigerate for 2 hours before removing from tin.
Passionfruit & Elderflower Cake in a Cup

Light and fluffy and delicious!
Ingredients
- 1 tbsp Elderflower Cordial
- 2 tbsp boiling water
- 2 tbsp melted butter
- 1 Passionfruit cake in a cup
Directions
- Combine melted butter, boiling water & elderflower cordial in your mug.
- Stir well & microwave for one minute.
- Serve with Greek yogurt for a delicious contrast of sweet & tart.
